Rainbow Veggie Slice: A Vegan BLW Delight for Toddlers

Introducing the Rainbow Veggie Slice – the ultimate addition to your toddler's lunchbox!

Our wonderful friend Cat from @little.vegan.eats created this recipe for OiOi, inspired by our new Insulated Lunch Bag range.

Whether you're a parent practicing Baby-Led Weaning (BLW) or simply looking for a delicious and nutritious meal idea for your little one, this colourful dish is sure to delight.

In this article, we'll share how to make these flavourful and wholesome slices, perfect for kids aged 6 months and older.

What's In the Rainbow Veggie Slice?

Ingredients

  • Preparing the Veggies

    5-6 cups of chopped veggies* (we used red & green capsicum/pepper, mixed tomatoes, spinach, broccoli florets, red cabbage, red onion)

  • Creating the Chickpea Flour Batter

    2 cups/240g of chickpea flour
    2 cups/500ml of water
    1/2 cup/30g of nutritional yeast
    2 tsp of Italian herbs
    2 tsp of garlic powder
    2 tsp of onion powder
    2 tsp of baking powder
    A few cracks of salt and pepper (omit for babies under 12 months)

How to Prepare the Rainbow Veggie Slice

Instructions

  1. Baking the Veggie Slice

    1. Preheat the oven to 180°C/350°F.
    2. Line a large dish with baking paper (a 10”x10” dish works well). Add all your chopped veggies, gently mixing to evenly distribute them.
    3. In a jug or bowl, combine the chickpea flour, water, nutritional yeast, Italian herbs, garlic powder, onion powder, baking powder, and salt and pepper (if not omitting for babies under 12 months). Mix together with a fork to remove any lumps.
    4. Pour the chickpea flour batter over the veggies and gently mix everything together with a fork.
    5. Top with carrot stars and shredded vegan cheese if desired.
    6. Place the dish in the preheated oven and bake for 40-45 minutes or until a skewer comes out clean. The slice will continue to firm up as it cools.
    7. After 10 minutes, remove the dish from the oven and gently peel away the baking paper once cooled.
